Super Bowl Food: Dip, Pizza and More

Sometimes the food is the best part of the Super Bowl party. As you are preparing for the big game, make things a little easier on yourself in the kitchen by utilizing the right kitchen tools and gadgets.

Spicy Roasted Red Pepper DipSpicy Roasted Red Pepper Dip

Ingredients:

  • 15 wheat crackers
  • 1 jar (24 ounces) roasted red pepper, drained
  • 1 1/2 cups walnuts
  • 1 tbsp. lemon juice
  • 1 tbsp. honey
  • 3/4 tsp. ground cumin
  • 1 loaf of sourdough bread, cut into 1-inch slices
  • 1/4 cup olive oil

Directions:

  1. Place the crackers, peppers and walnuts into the Ninja Kitchen System. Cover and process until the mixture is finely chopped. Add the lemon juice, honey and cumin and process until the mixture forms a paste.
  2. Brush the bread slices with the oil. Place the bread slices onto a baking sheet. Broil 7 inches from the heat for 2 minutes or until the bread slices are lightly browned on both sides, turning the bread slices over once halfway through broiling.

 

Potato Skins with Cheddar and Bacon

Ingredients:

  • 4 medium baking potatoes, scrubbed
  • 2 tbsp. butter
  • 7 oz bacon, rind removed, cut into sticks
  • 3/4 cup shredded Cheddar cheese
  • 2 shallots, finely chopped
  • 2 tbsp. chopped parsley
  • scant 1/2 cup whole milk
  • salt and freshly ground black pepper

Directions:

  1. Preheat the oven to 400°F (200°C). Prick the potato skins all over with a fork. Bake in the oven for about 45–50 minutes, until tender. Reduce the oven temperature to 350°F (180°C). Meanwhile, cook the bacon in a frying pan over medium-high heat about 4 minutes until golden. Add the shallots and cook until they soften, about 1 minute more.
  2. Slice off the top third of each potato, horizontally. Using a spoon, scoop out the flesh into a large bowl. Reserve the hollowed-out skins and place in a lightly oiled baking dish. Place the potatoes into the Ninja Kitchen System and process until mashed. Add the milk and butter, and beat until smooth. Stir in the Cheddar and bacon mixture along with the parsley. Season with salt and pepper.
  3. Spoon the mixture back into the potato skins and bake for 20–25 minutes, or until the filling is heated through and golden on top. Serve hot with extra chopped parsley sprinkled on top, if desired.

 

Game Day Spicy Sausage Pizza

Ingredients:

  • 2/3 cups warm water (105 to 110 degrees F)
  • 1/4 teaspoon active dry yeast
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoons sugar
  • ¼ tablespoons olive or canola oil, plus more for bowl
  • 1 (1 pound) package hot sausage
  • 1 (8 ounce) can tomato sauce
  • 1/4 teaspoon crushed dried basil leaves
  • 1 (8 ounce) package shredded Mozzarella cheese
  • 1/4 teaspoon crushed dried oregano

Directions:

  1. Proof the yeast by sprinkling on top of water. Let rest for about 10 minutes until yeast gets bubbly and foamy. Add water and yeast to the Processor Bowl and add flour, salt and ¼ tablespoons of oil. Pulse and hold to blend and continue processing until dough forms a ball. Continue to process to knead the dough until dough is smooth and elastic. Oil a large bowl and turn out dough into bowl. Cover with a tea towel and let rise until doubled in size.
  2. Preheat oven to 450 degrees F. In a large skillet, over medium heat, brown the sausage until cooked through, using a wooden spoon to break up the sausage. Remove from heat and drain off fat. Place pizza crust on a large baking sheet. Stir together the tomato sauce, basil, and oregano. Spread tomato sauce evenly over pizza. Sprinkle cooked sausage evenly over tomato sauce and top with Mozzarella cheese. Bake 10-12 minutes or until cheese is melted and lightly golden. Cut into wedges to serve.
