Foodie Friday: The Most Simple Soup Ever

A very sweet client of mine brought me lunch the other day: soup. I’m usually not a big fan of soup, no matter how bulked up it is with veggies or noodles or meats, because it still never fills me up.  This soup, however, did so I had to ask her what was in it.

Ingredient list?

Chicken Broth.

Fat free Refried Beans.

Salsa.

That’s it.

The recipe? Just as simple.

I decided to make it last night, and it did not disappoint.

I mixed everything in a saucepan and heated it through.

Meanwhile, I grilled some chicken on my handy, dandy George Foreman Lean Mean Fat Reducing Grilling Machine.

I shredded it, mixed it in with the soup, topped it with some cheese and viola! Spicy Mexican Chicken Soup. I toasted half of a whole wheat hamburger bun and had a very filling, nutritious meal.

The best thing about this recipe is how versitile it is. You can add beans, ground beef or turkey, veggies: whatever you want. Mix in some sour cream, or crumble some tortilla chips on top: the possibilities are endless.

I mixed some of the leftovers with some brown rice for lunch today, and honestly, I think its better this way.

    I just finally got around to trying this tonight. YUMMY! I threw in a couple spoonfuls of Oikos Greek Yogurt, and then stirred some honey into the rest of the yogurt for dessert. I think this will become a staple around this house.

    Made it, ate it, really liked it. Added about 2 cups water, can of black beans,lots of cumin (I have a cumin addiction) and about 3-4 cups pureed San Marzano tomatoes.

    Served w/ a bit of yogurt mixed in. Everyone loved it, had to tell 3-y-o picky eater that Dora called me with the recipe, then he loved it too :)

    fbg- i used the whole cans of broth and beans, and then half of the jar of salsa (i should have mentioned that.) for thicker soup, use less broth.

    modelbehavior- no, thats just the name of it, it says it on the front. Ive never seen a full episode of sex and the city 1) because i dont have cable and 2) SJP’s face and Kim Catrall’s cleavage freak me out.
